In this video, we are going to see how to prepare pancake bites in a donut hole pan or a muffin tin.
What you’ll need:
1 cup flour
3 tsp sugar
2 TBSP flax seed meal
1 tsp baking powder
1/2 tsp vanilla
3/4 cup Milk
2 TBSP melted butter
1/4 cup mini chocolate chips or blueberries
The first step is to mix our dry ingredients. Mix the baking powder with the flour in a bowl. Add some regular sugar, just a scoop. Then, add the flax seed meal. Mind you, the last ingredient is optional, but it is a great nutritional boost. Stir!
Pour the milk into a bowl. Add a little splash of vanilla. Lastly, add the egg and the melted butter. When it comes to the butter, you can always use coconut oil instead of it, if that’s what you prefer. Beat it until the egg is all mixed in.
The final step before the batter goes into the pan is to mix the dry ingredients with the wet ingredients. Do it a little bit at a time so it doesn’t get clumpy.
Spoon your batter in the mini donut hole pan. The beauty of this particular variety of pancakes is that it is a change from the everyday pancake meal and it will keep kids interested in eating their breakfast. Second, it is convenient that these are cooked in the oven, which spares you some time in the morning.
Now, fill them in with ingredients by your choice. You can use chocolate or blueberries or whatever you find tasty for you!
Preheat the oven to 375 degrees and these are going to stay in there for about 10 minutes. Once they are done, use a wooden skewer to get them out of the holes without damaging them. Sprinkle a little powder sugar before serving.
